Classic coil cooktops have exposed elements that use electricity to heat up quickly, consistently, and evenly. These rugged coil elements are made to be long-lasting as well as easy to replace, so they're the most cost effective option for those of us prone to spills and pots boiling over. Ceramic cooktops keep their coils under glass in order to offer a sleeker look and a smooth, and therefore more forgiving, cooktop surface for dealing with spills. Many feature expandable elements that let you adjust the size of the heated area to suit whatever pot or pan you're using.

Gas-powered cooktops offer fast initial heating and quick cool down, which is both an important safety feature and tool for chefs who create dishes that need a lot of heat adjustments to come out just right. Although ceramic cooktops are glass, regular glass cleaners should not be used for their care. For gas cooktops, disconnect grates, griddles, and other removable parts before washing grates with dishwashing soap and a minimal amount of hot water. Dry everything thoroughly before reattaching, and be wary of water use while cleaning fuel ports and the cooktop surface with a damp sponge, as excess water may damage the igniter. Induction cooktops only heat up where they contact cooking dishes, so messes are less likely to become baked on. Their glass ceramic surfaces are prone to scratches and abrasions and must also be cleaned using only specifically designed products.
