Overview

A 26 cm fry pan in heavy cast iron, sealed under three layers of food-grade enamel in a sapphire blue finish. The iron stores heat and gives it back evenly, so it sears well and keeps a braise at a steady simmer. Straight sides hold splatter in the pan, two pour spouts drain fat or pour sauce, and the wide handle gives a firm grip. Use it on gas, electric, ceramic or induction, then finish in the oven up to 260 °C.
